Puffed Wheat Energy Bars

Puffed Wheat Energy Bars
  3 cups
1/2 cup
1/2 cup
1/4 cup
1/3 cup
1/4 cup
1/4 cup
Puffed wheat cereal
Chopped nuts
Raisins, chopped dates etc
Chopped dried cherries
Creamy peanut butter
Honey
Corn syrup
  • Heat oven to 350°F. Grease a 9"x5" baking pan.
  • In a medium bowl, combine the cereal, nuts and dried fruits.
  • In a saucepan, combine the peanut butter, honey and corn syrup, and bring to a boil. Stir constantly until the mixture thickens slightly, about 1 minute.
  • Pour peanut butter mixture over the cereal mixture and stir until blended.
  • Pour into baking pan, and bake 10 minutes.
  • Cool on a wire rack, then cut into bars. Store in an airtight container at room temperature, or in the freezer.
Nutrition facts per bar: 180 calories; 4 gr protein; 8 gr fat; 22 gr carbohydrate.
 
If you can't find dried cherries, try "Craisins", sweetened dried cranberries.
 
The fat in the nuts and peanut butter is healthy fat, good for you in most circumstances, but a slow-release form of energy that would not be optimal for a race.
