Fig Energy Balls
  3 dozen
1/3 cup
4 Tbsp
2 Tbsp
2 1/2 cups
1/2 tsp
1/4 tsp
1 Tbsp
1/4 cup

1 cup
Dried figs
Honey
Orange juice
Lemon juice
Unbleached flour
Baking soda
Baking powder
Vegetable oil
Corn syrup
Egg whites
Oat bran
  • Heat oven to 350°F.
  • In a food processor, combine the figs, honey, orange juice and lemon juice.
  • Separately, combine all the remaining ingredients except the oat bran in a large bowl.
  • Add the fruit mixture to the dry, form into 20 balls, and roll them in the oat bran.
  • Bake at 350°F for 15-20 minutes.
  • Store in the refrigerator or in the freezer.
Nutrition facts per ball: 150 calories; 4 gr protein; 1 gr fat; 36 gr carbohydrate.
 
The potassium in the figs makes these a very healthy snack. However, on a long race like the Défi you wouldn't want the fibre in the oat bran. One alternative would be to roll them in grated coconut...
